Our Flor bottling is derived from Sauvignon blanc, though you wouldn’t know it now, and though Sauvignon’s not a traditional choice for Sherry making in Spain.  But the process here was much the same, including fortification, an unusual second fermentation step, and long aging in a partially-filled barrel.  Dry and mesmerizing, such wines are far from ordinary.  Pre-order now, for delivery or pick-up in late February.
